Last night my hubby asked if I would make up some Pico de Gallo, so this afternoon I did and thought why not enjoy it with fajitas for dinner.
I have said it before and I will say it again, we LOVE Mexican food in our house! We like to eat a relatively “clean” diet and I find that if done right Mexican cuisine is great for this as you get a lot of flavor from the fresh veggies and spices with out a bunch of fat. Don’t get me wrong if you add heaping amounts of cheese, full fat sour cream and heavy sauces to your meal then you might not have a light and healthy dinner.
So next time you are craving Mexican whip up some fajitas and skip the jarred store bought salsa and give this Pico de Gallo a try 🙂
Ingredients
- 5 roma tomatoes
- 1/2 a large red onion
- 1 jalapeno – seeded (if you want more spice you can leave the seeds in)
- 1 bunch of washed cilantro
- juice of 2 limes
- 1 tablespoon of fresh minced garlic
- 1/2 teaspoon of salt
- 1 teaspoon of cumin
Method
1. Dice your tomatoes, onion, jalapeno, and cilantro and put in bowl
2. Add lime juice, garlic, salt and cumin
3. stir so well combined and cover
4. place in fridge for a minimum of 1 hour before serving (the longer it sits the better it tastes)
